Muffins, Bran Oatmeal

Quantities Ingredients
1/2 cupnonfat dry milk
1 cupwater
1 cup40% bran flakes cereal
1egg
2 tablespoonsvegetable oil
1/4 cupbrown sugar, packed
1 cuprolled oats
2/3 cupflour
1 tablespoonbaking powder
1/4 teaspoonsalt

  1. Combine dry milk, water and cereal in a mixing bowl.
  2. Add egg, oil and brown sugar; mix well.
  3. Combine remaining ingredients, mix with wet ingredients until just moistened. (Over mixing results in tough, flat muffins).
  4. Fill oiled or paper lined muffin cups 2/3 fill. A 1/4 cup measuring cup can be used as a scoop to pour the batter into the muffin cups.
  5. Bake at 400¡F for 15 minutes

NOTES: Variation: Use 1 cup milk instead of 1/2 cup dry milk powder and 1 cup water. Substitute light or dark corn syrup or honey for sugar. Bran can be used instead of bran flakes cereal. Add cup raisins, blueberries, chopped dates, apples or nuts in step # Sprinkle cinnamon onto batter in muffin cups before baking.
