Carrots, Oranges, and Raisin Salad

Quantities Ingredients
1 1/2 cupwashed and shredded carrots
1orange, peeled and sliced
1/2 cupraisins
1/3 cuplow fat yogurt
6lettuce leaves (optional)


Equipment Instructions
  • vegetable peeler or grater
  • measuring cups
  • sharp knife
  • cutting board
  • mixing bowl
  • mixing spoon

  1. Stir carrots, oranges and raisins together in a mixing bowl.
  2. Add the yogurt and stir.
  3. Chill.

NOTES: Variation: A small can of drained pineapple or 1/4 cup orange juice concentrate can be substituted for the orange.Suggestion: Can be served on lettuce leaves.
