Creamy Salad Dressing

Quantities Ingredients
2 tablespoonsflour
1 tablespoonsbrown sugar
1 tablespoonregular mustard
1/4 teaspoonpepper
1 cupwater
1/2 cupnonfat dry milk powder
1egg
1/4 cupvinegar
1 cupplain low-fat yogurt
1 tablespoonfrozen orange juice concentrate

  1. Combine flour, brown sugar, mustard and pepper in saucepan.
  2. Mix water, dry milk and egg in small mixing bowl. Gradually add mixture to flour mixture.
  3. Heat to boiling, stirring constantly. Continue to stir for one minute after the mixture boils.
  4. Remove pan from heat and stir in vinegar. Chill.
  5. Stir in yogurt and orange juice concentrate after dressing is cold.
  6. Refrigerate in covered container. Dressing will keep up to 2 weeks in refrigerator.

NOTES: Variation: One tsp. dry mustard can be substituted for the "regular" mustard.
