1/4 cup | onion, chopped (about 1/2 onion) |
1 | clove garlic, diced |
2 tablespoons | vegetable oil |
1 | carrot, grated |
1/4 cup | green pepper, chopped |
1/2 teaspoon | basil or oregano |
2 cups | canned tomatoes |
1 (6 ounces) can | tomato paste |
1/4 teaspoon | pepper |

- SautŽ onion and garlic in the vegetable oil in frying pan until onion is soft. Discard garlic.
- Add grated carrots, chopped green pepper, and herbs, stir.
- Add tomatoes, tomato paste and pepper.
- Simmer for 20 minutes.

NOTES: Serving Suggestions: Great for pizza, over bean patties, or add water to thin sauce for spaghetti.Variations: Garlic powder (1/2 teaspoon) can be used instead of clove of garlic. Chopped fresh tomatoes can used instead of canned. For spicier sauce, add 1 tablespoon parsley or 1/2 teaspoon thyme. For sweet sauce, add 1 teaspoon brown or white sugar. |
