- vegetable scrub brush
- cutting board

- medium mixing bowl

- cookie sheet/pizza pan
- pancake turner

- Scrub and cut potatoes into long strips (about 1/2 inch thick). Dry strips thoroughly with paper towels.
- Toss strips in the mixing bowl with oil, as if you were making a salad.
- After strips are coated with oil, spread them in a single layer on the cookie sheet.
- Bake at 400¼F for about 35 minutes. Turn strips to brown on all sides.

| NOTES: Variation: If a more crisp potato is desired, place under a broiler for a minute or two. To decrease fat and calories, place fries in a single layer and spray with vegetable spray.Serving Suggestion: Top with green pepper slices and grated cheese. Bake a few minutes longer to melt the cheese.The nutrient analysis was based on "peeled" potatoes; fiber levels will be higher if potatoes are not peeled. |
