Wilted Spinach

Quantities Ingredients
3 slicesbacon, cut in 1/2 inch pieces
2 tablespoonssugar
1/4 cupvinegar
2 tablespoonsvegetable oil
4 cupsfresh raw spinach, washed and coarsely chopped

  • frying pan
  • mixing spoon
  • measuring spoon
  • measuring cups
  • large bowl (to serve salad)
  • paper towel or napkins

  1. Fry bacon pieces until crisp in the frying pan. Remove from pan. Pat bacon with paper towel or napkin to absorb grease. Pour bacon grease out of pan and discard.
  2. Turn off heat. Mix sugar and vinegar in frying pan used for bacon until sugar dissolves.
  3. Stir oil into sugar and vinegar. Turn heat in medium low and cook until slightly thickened, stirring constantly.
  4. Put washed spinach in large bowl. Pour the hot dressing over the spinach. Add bacon.
  5. Toss to mix and serve immediately.

NOTES: Variation: To reduce fat, omit or use less bacon.
