Zucchini Au Gratin

Quantities Ingredients
4 cupszucchini, washed and thinly sliced
1/2 cuponion, sliced
2 tablespoonswater
1 tablespoonmargarine
3 tablespoonsgrated Parmesan cheese
 pepper to taste


Equipment Instructions
  • sharp knife
  • cutting board
  • measuring cup
  • measuring spoon
  • frying pan with cover
  • large mixing spoon

  1. Place zucchini, onion, water, margarine and pepper in frying pan. Cover and cook over medium heat for one minute.
  2. Remove cover and cook until crisp-tender, about ten minutes.
  3. Turn with large spoon to cook evenly.
  4. Sprinkle with cheese; toss lightly.
  5. Serve at once.

NOTES: Variations: Green pepper can used instead of onion. Summer squash can be used instead of zucchini.Serving Suggestion: Can be used over rice or noodles.
