| 2 teaspoons | vegetable oil |
| 1/2 cup | onion, chopped |
| 1 clove | garlic, minced or 1/2 teaspoon garlic powder |
| 1 cup | cooked turkey, cut into cubes |
| 4 | small carrots, sliced |
| 1 | stalk celery, sliced |
| 1 (16 ounces) can | tomatoes, chopped |
| 1 cup | water |
| 2 | potatoes, diced |

Instructions |

- Heat oil in frying pan. Add onion and garlic to oil. Stir for two minutes.
- Add turkey and stir until heated.
- Add carrots, celery, potatoes, tomatoes and water to the turkey mixture.
- Bring stew to a boil, then lower the heat and simmer for 30 minutes or until vegetables are tender.
- Add pepper before serving. Refrigerate leftovers.

| NOTES: Variation: One cup ground turkey or chicken can be substituted for cooked turkey in step If you use ground turkey, cook it until it is no longer pink. |
