Easy Turkey Stew
Number of Servings 5   Serving Size 1 1/4 cup
Preparation Time 20 minutes   Cooking Time 30 minutes
         
Quantities Ingredients
2 teaspoonsvegetable oil
1/2 cuponion, chopped
1 clovegarlic, minced or 1/2 teaspoon garlic powder
1 cupcooked turkey, cut into cubes
4small carrots, sliced
1stalk celery, sliced
1 (16 ounces) cantomatoes, chopped
1 cupwater
2potatoes, diced
 
 season to taste with pepper


Equipment Instructions

  • frying pan with cover
  • stirring spoon
  • can opener

  1. Heat oil in frying pan. Add onion and garlic to oil. Stir for two minutes.
  2. Add turkey and stir until heated.
  3. Add carrots, celery, potatoes, tomatoes and water to the turkey mixture.
  4. Bring stew to a boil, then lower the heat and simmer for 30 minutes or until vegetables are tender.
  5. Add pepper before serving. Refrigerate leftovers.

NOTES: Variation: One cup ground turkey or chicken can be substituted for cooked turkey in step If you use ground turkey, cook it until it is no longer pink.
