Sweet Potato Pie

Quantities Ingredients
3 or 4sweet potatoes
1 to 1/2 cupswater
1/2 cupmargarine
3eggs
1 1/4 cupssugar
3 tablespoonsflour
1 1 /2 tablespoonnutmeg
1 tablespoonallspice
1/2 to 3/4 cupmilk
1/2 teaspoonvanilla
 single pie crust (see Desserts-13)

  • measuring spoon
  • saucepan

  1. Peel and slice potatoes. Cook in water until soft. Pour off all the water. Put cooked sweet potatoes in large mixing bowl. Cool for about 10 minutes. Mash.
  2. Add margarine, sugar and eggs. Stir or mix together.
  3. Add flour, nutmeg, allspice and milk. Mix together.
  4. Add the vanilla. Mix. Pour in pie shell.
  5. Bake at 350¡F for about 30 to 45 minutes.
