Yogurt Popsicles

Quantities Ingredients
1 (6 ounces)can frozen orange juice concentrate
4 tablespoonsgelatin (any fruit flavor)
2 cups (16 ounces)plain low fat yogurt


Equipment Instructions
  • saucepan
  • measuring spoon
  • stirring spoon
  • cookie sheet
  • aluminum foil or wax paper
  • 12 (3 ounces) paper cups or ice cube tray
  • 12 wooden cups

  1. Place frozen orange juice concentrate in saucepan and sprinkle with gelatin
  2. Cook over low heat, stirring constantly, until gelatin dissolves. Cool.
  3. Add 3 orange juice cans of cold water to juice gelatin mixture.
  4. Pour yogurt into cooled gelatin mixture and stir until smooth.
  5. Place cups on cookie sheet. Pour yogurt mixture into paper cups (or ice cube trays) and cover the cups with aluminum foil.
  6. Insert stick into each popsicle by making a slit in the foil over the center of each cup. Freeze popsicle until firm.
  7. When you are ready to serve the popsicle, run warm water on the outside of the cup to "loosen" each popsicle.
  8. If using an ice cube tray, pour mixture into tray and cover with wax paper. Insert stick in center of each section by pushing through the wax paper into mixture.
  9. Freeze until firm.

NOTES: Variation: Vanilla yogurt can be used instead of plain yogurt.
