Company Rice with Beans

Quantities Ingredients
1 cupuncooked brown or white rice
2 cupswater
1 tablespoonoil, margarine or butter
1onion chopped (2/3 cup)
2medium tomatoes chopped
1medium zucchini, chopped
1/2 teaspoonoregano (optional)
1 (16 ounces)can beans
or 1 1/2 cupscooked beans
1 cup (or less)shredded cheese
 pepper to taste

  1. In a medium sauce pan, combine the rice and water. Bring to a boil, reduce heat, cover with pan and simmer for 20 minutes (35 minutes for brown rice). Fluff with a fork before serving. Serve within thirty minutes.
  2. Meanwhile, heat oil, margarine or butter in a large frying pan. Add the onion and cook until soft.
  3. Add the tomatoes, zucchini and oregano. Cover the frying pan. Simmer the mixture for about five minutes or until vegetables are tender but crisp.
  4. Add the beans. Simmer the mixture, stirring occasionally, until heated through. Add pepper if desired.
  5. To serve, spoon the vegetables-bean mixture over hot rice. Sprinkle cheese on top.

NOTES: Cheese was not included in the nutritional analysis. Refrigerate leftovers immediately. Put in a covered shallow pan. Use within one or two days.
