- In a medium sauce pan, combine the rice and water. Bring to a boil, reduce heat, cover with pan and simmer for 20 minutes (35 minutes for brown rice). Fluff with a fork before serving. Serve within thirty minutes.
- Meanwhile, heat oil, margarine or butter in a large frying pan. Add the onion and cook until soft.
- Add the tomatoes, zucchini and oregano. Cover the frying pan. Simmer the mixture for about five minutes or until vegetables are tender but crisp.
- Add the beans. Simmer the mixture, stirring occasionally, until heated through. Add pepper if desired.
- To serve, spoon the vegetables-bean mixture over hot rice. Sprinkle cheese on top.
