Mexican Pizza
Number of Servings 4   Serving Size 1 pizza

Quantities Ingredients
4tortillas, 6-inch diameter
1 can (15 ounces)canned pinto beans
or 1 1/2 cupscooked beans
1 tablespoonchili powder (or to taste)
1/2 teaspooncumin (or to taste)
1/4 teaspoonsalt (optional)
1/2 cupsalsa
3/4 cup (3 ounces)shredded low fat cheese
 chopped green pepper (optional)
 chopped onion (optional)


Equipment Instructions
  • mixing bowl

  • 1-2 cookie sheets
  • spoon
  • grater
  • sharp knife

  1. Drain beans and put them in the mixing bowl. Mash beans with a fork.
  2. Add chili powder, cumin, and salt (optional) to beans and mix.
  3. Put tortillas on cookie sheet.
  4. Top each tortilla with 2 tablespoons of salsa, 1/4 of the bean mixture and 3 tablespoons of shredded cheese.
  5. If desired, add chopped green pepper and/or onion.
  6. Bake until cheese is melted and edges of tortilla start to brown.
