Soft Tacos

Quantities Ingredients
1/2 poundground beef
1/2 cuponion, chopped
1 (8 ounces) canrefried beans
1 (6 ounces) cantomato paste
1/4 cupwater
1/2 teaspoonchili powder (optional)
10-12tortillas (6 inch)
1 cupshredded cheese
2 cupsshredded lettuce (optional)
1 cupfresh tomatoes, chopped (optional)
1/2 cupgreen peppers, chopped (optional)
 Taco sauce (optional)

  1. Brown ground beef in frying pan. Drain excess fat.
  2. Add onion to ground beef and cook until onion is clear.
  3. Add refried beans, tomato paste, water and chili powder to beef mixture. Mix thoroughly and cook until warm stirring constantly.
  4. Fill tortillas with meat and bean mixture and fold over. Place in baking dish. Bake at 350¡F for 15-20 minutes.
  5. Sprinkle cheese on top and bake for an additional 5 minutes or until melted.
  6. Top with lettuce, tomatoes, green pepper and taco sauce, if desired.

NOTES: Variation: To lower the calories, fat and cholesterol, omit the meat.Medium fat ground beef was used in the analysis; calories and fat would be lower if lean ground beef were to be used.
