Chicken/Turkey or Tuna Salad
Number of Servings 7   Serving Size 1 1/4 cups
Preparation Time 25 minutes   Cooking Time 1 hour or longer
         
Quantities Ingredients
3 cupselbow or spiral macaroni, cooked
1 1/2 cupscooked chicken or turkey, diced, or 9 ounce can tuna, drained
1green pepper, diced
1/2 cuponion, chopped
1 cupcelery, diced
1 cupfrozen peas
1-2carrots, grated
3/4 cuplight salad dressing


Equipment Instructions
  • saucepan with cover
  • measuring cup
  • mixing bowl and spoon
  • cutting board
  • sharp knife
  • grater
  • strainer or colander

  1. Mix macaroni, meat, green pepper, onion, celery, peas and carrots together in mixing bowl.
  2. Add salad dressing and mix well.
  3. Chill before serving. (Note: Frozen peas will thaw while salad is chilling.)

NOTES: Variations: Cooked rice may be used instead of macaroni. Yogurt may be used instead of salad dressing.Tuna was used in the Nutrient Analysis. Chicken would produce approximately the same results. Chicken was used in the nutritional analysis.
