Hamburger and Vegetable Soup

Quantities Ingredients
1/2 poundground beef
1 cuponion, diced
1 quartwater
1bouillon cube (optional)
1raw potato, peeled and chopped
1 cupcarrots, diced
1 cupcabbage, shredded
1/4 cuprice, uncooked
1/8 teaspoonpepper
1 (28 ounces) (4 cups)tomatoes


Equipment Instructions

  • measuring spoons
  • large pot with cover
  • large spoon
  • grater

  1. Brown ground beef and onion in large pot. Drain off excess fat.
  2. Add water and bouillon cubes.
  3. Add potatoes, carrots and cabbage. Bring to a boil. Sprinkle rice into mixture.
  4. Add pepper.
  5. Cover and simmer for one hour. Add canned tomatoes, heat to simmering and serve.

NOTES: Variations: Ground turkey can be substituted of ground beef. To lower the sodium/salt, prepare without the bouillon.
